It seems to me that the planes have basically no dihedral. Even _tiny_ amounts of roll will just stay there, the plane doesn't seem to return to normal as one would expect.

This may be due to the fact that I'm playing with the mouse and thus I'm never 100% sure that it's actually centered, so before going further, can someone suggest a way to "center" the mouse and re-test?
