Bessie, the flying cow (Bull?) has ear (control surfaces) that act like stabilators on an F-14. I was going to go with elevators and ailerons in the traditional sense but part of what makes planes like the F-14 and F-15 so cool is that their stabilators are full flying, meaning they control both elevator AND aileron functions.

I decided to keep the flaps (along entire trailing edge of the wings) just flaps, and not ailerons. It looks way cool the way it is now. I hope you guys will enjoy it as much as I do. Actually, I am gonna try the same method with the flaps and ailerons too. It'd just be icing on the cake if I can make that work as well.

Ok, I just tried to do the flaps and ailerons in a mix type way like the stabilators and no luck. Oh well, it's still fun. Looks like flaps only for the wings. If I remember correctly MH told me I couldn't have two instances of the same control surface. He of all people should know. I tried to force it to work but it just wouldn't. Maybe in a future beta Michael H could remedy this? :P
