hehe, I haven't seen a 75 mission campaign yet...

I'm no campaign expert, but I've made a few campaigns up 'til now, and it just depends on your imagination. However, if you're making the campaign historical, then pick out the important points and base your missions around them.

Most of my campaigns have around 10 missions, sometimes more, or less, depends on how far you wanna go. You can also try your hand at "semi-dynamic" campaigns whereby the player is told (in the debriefing) which mission to play next depending on whether he/she won or lost the previous one. This is not easy though, and you can get carried away quickly if you're not careful. I made a campaign like this called the "African Invasion Campaign" and it had 10 missions plus a strategy guide.

To answer your question about whether six missions is enough, I also made a five mission campaign once.

A SIX PACK? Six packs are for...oh wait you're talking about missions.
It's one of those things that since it's you that's taking the time to entertain the rest of us, you get to say how big it is. The rest of us will play with it no matter how many missions there are. Mission making is time consuming and we all appreciate the people who do it.
Just be very sure you get the correct aircraft with the correct nation and side. Otherwise the missions won't work properly.
