Using the supplied training missions and the mission editor you can make new missions / change plane loadouts.

Double click on the mission you want to change in the training folder. Go to file and 'save as' a different file name.

You can change the loadouts for the plane by right clicking on it's icon on the mission map and then selecting properties. In the loadout field just select what you want.

If you read the CAMOps and CarrierOPS guides which comes with the download it tells you how to create new CAM / Carrier missions. (or you can just modify one of the existing training missions)
