OK .... can't answer all the questions, but I can hit a few 
110's are available. Can't remember exactly where, but there was one Aladar did. It has been worked on since, I think by a guy called Scorpion Rouge. He has a site, where you can get it. The He111 has never been completed. One day maybe !
2) Nations ... when you unzip the files to your media directory, you should see some new squadrons. If you don't check the install instructions VERY closely. You need to make sure 'use file names' is enabled in winzip too.
3) Planebuilding .... now there is a can of worms!!!!
Basic tools you are going to want are the OPS tools, which allow you to dig around in the compressed file archives to extract the stuff.
OpenPlane studio is another MUST HAVE. It allows you to open and edit the plane files.
also, you will want a good paint program that will let you use TIF files.
Finally, you will want a modelling tool. I use AC3D ( £25 available from the guys website ) There are some plugins which let you use all the right sorts of file types. Some other guys use 3D Studio Max, but I just can't get on with it. I really like AC3D.
A couple of the guys also managed to get some good results wiht Anim8or. It's free. I am trying to help Thijs get to grips with it, and learn it myself. I did a tutorial on AC3D, which you can link to from http://ftp2.progeng.com/opwwi/index.asp
It's geared to AC3D but it might give you some ideas
p.s. If you want to check out some of my models, you'll need to get the WW1 pack. I built the models for the Ca33, Bleriot XI, Taube and re-did the Dr1 wings. Also did the Halb DII and have nearly finished a SPAD VII build too. All done with the tools listed above.
