Is there a way to edit the missions that came with the game (in the box)?
Some of them are good but I get tired of flying against 190's.

Yes, you can unpack DATA2.par and you'll find all Training, Scramble and 'Missions' missions.
www.openplane.org should have the PARfile tools which includes "BigMunger", the program used to view the contents of the PAR files, build them and also 'unzip' them.
