Assuming you don't want to spend £3500 on a modelling program, I would recommend AC3D as your basic modeller. It works well, is stable and reliable in it's most recent release, and it's creator even pops into this forum every now and again. Oh yes, and he responds to e-mails!Also, SV did an excellent set of tutorials for AC3D. Some of the early installments are a little out of date, but they get you started from square 1.
also, you will need open plane studio...free! and bloody good.
Hippies plug-ins are another must have if you go the AC3D route. They allow you to break and re-build the plane model file so you can edit it in AC3D. The latest OL tools allow you to import a complete plane into AC3D and rebuild it again after you have swapped aprts around. Everything comes out in the right place too!
If you want to import LOD's try to track down an early version of OPS. The later ones don't import LOD's, only .OBJ or Max generated .WRL files.
Whew....well, once you have those, find yourself some good 3 way drawings of whatever you want to build and away you go!
Be warned though......Plane building can seriously damage your health, family life, mental stability etc. etc.
It is also highly addictive...and regular 'planies' can be easily spotted by their bloodshot eyes, pale complexions, and constant mutterings about wing area, DOF angles and climb rates......
You have been warned!!!!
